After the great day on the swamp on Friday, I worked the next two days in the VC. Business has picked up as predicted, so at least there aren’t hours and hours of no visitors.
When I drove to work on Sunday, I noticed one of the pine trees about to explode with pollen. Luckily I’m not allergic to this pollen, as it has been coating everything for a couple of weeks.
I found each end of the branches to be very geometric with the round spread of needles, and the bouquet of catkins in the middle.
The centers kind of reminded me of those ‘snakes’ you light with a match. Remember those? As a kid I loved the smell of the sulphur when you lit one of those little black pellets that grew before your very eyes. This looked like a whole box got lit at once to me.
A SMALL FOREST OF CYPRESS KNEES IN THE SWAMP
I was pleasantly surprised to get an email yesterday, on a National Holiday, from the Volunteer Coordinator at the National Elk Refuge (NWR) in Wyoming. I had applied to volunteer there for the coming summer, but it is a very competitive process since lots of people want to volunteer there. It’s located in Jackson which is close to both Yellowstone NP and Grand Teton NP.
My friends, John and Diana, have volunteered there the last couple of summers, and alerted me early last fall to the possibility of some openings for this summer. Folks that volunteer there tend to return for several years. So I was happy to hear that I’ll be granted an interview within the next couple of weeks. I’m thinking I’m good to go, but one can never tell. Diana, of course, has put in a good word for me.
WILD BLUEBERRY BLOOMS?
I seem to remember some bloggers like Gypsy mentioning that they really like Biscotti. I’ve never really had it before, so when I saw it at Publix this morning on the buy one/get one free table, I decided to try it. I don’t need two boxes of it since I didn’t know if I’d like it, but at Publix if you only buy one you get it for half price. I chose a package with cranberry/pistachio Biscotti. I tried a piece tonight, but the jury is still out. I’ll see if the taste and dryness of the bread grow on me. Do you like it?

ReplyDeleteWe have a recipe for cranberry pistachio biscotti. It's "to die for" dipped in coffee, hot tea, or milk. Amazing how it's so dry, but when dunked, it dissolves in your mouth. Definitely too dry to eat plain.

Yup, yesterday I got Turtle Pecan and Salted Caramel biscotti at the BOGO table. Both are good, kinda nice when you have a sweet tooth. With or w/o coffee. We like.

After Paul retired from teaching, we did chain saw craving. He used cypress knees to do a ton of smaller cravings. I have one hanging in the fifth wheel. It is a tree spirit. He did beautiful work.

ReplyDeletewell? biscotti is absolutely wonderful with coffee as said above ... It's usually in big ol jars at coffee bars... good stuff.
If you don't like coffee then it would certainly be very dry... don't know if it'd be as tasty in hot tea or such ... never tried it.
Hope you get your Jackson job... sooooo beautiful there...

I have made biscotti...you have to dunk it in coffee for the full effect...It is very dry without that...Oh, I so hope you get to go to Wyoming this summer...another totally different place, and we loved it!

ReplyDeleteIf it's too crunchy and crispy to suit your taste, just dunk it in coffee (or possibly tea). Don't leave it in the liquid more than a second because it gets soaked through and soft, and will break up in your coffee. I love the almond biscotti with chunky almonds, and one side coated in chocolate. I need to run out to Costco tomorrow and get some!

ReplyDeleteJohn told me to tell you to dip you biscotti in your morning coffee and you will love it. I've never had biscotti and hate coffee, so I cannot second that motion.
ReplyDeleteI also did not like the dry bread, so I used it to make French toast. I drink my coffee black, so didn't think about dipping it. Hope you get to go to Jackson, one of our favorite areas. Will you have to physically go there to interview, not Skype?

I'm a coffeeholic (10 MUGS a day), so I use Folger's for my DUNKIN'!!!! Wyoming is GREAT country to spend the summer in, if only there weren't so many out of state people there!!! You will see some 'strange birds' though!!! Emma will like the elk, they'll chase her!!! YOU WILL GET THE POSITION!!!

ReplyDeleteBiscotti makes me think of the hard toast we used to give to teething babies.
We've visited the National Elk Refuge but never volunteered there... great opportunity to see Yellowstone and even on up to Glacier (my favorite!)... hope your interview goes well. That pine pollen is really hard on folks with allergies.. and it's really bad about coating vehicles and motorhomes with a coat of sticky yellow dust. UGH!

ReplyDeleteMy son loves biscotti dipped in milk! I'm not crazy about it, although I did teeth on it when I was a baby. I was born in Italy and it was easy to get. Mother said I wouldn't touch the teething biscuits she bought at the PX.

Good luck with the Elk Refuge. We are volunteering with a couple who have worked there the past five years and speak very well of it. They are going to Alaska this year so they may be one of the vacancies!

Yes, as others have mentioned a little dipping in your morning coffee or evening hot chocolate is good. The Italians traditionally dip it in Vin Santo, a sweet wine, for an after-dinner treat. My favorite biscotti is simple almond.

Catherine really likes biscotti- she is a dunker. I don't like stuff dunked in my coffee so I don't eat it.
